Spanish Squid Croquettes
Crispy Spanish-style croquettes filled with tender squid, perfect as a snack or appetizer.
Ingredients
- β1 pound Squid tubescut into 1-inch pieces
- β2 Baby potatoesboiled and diced
- β1/4 cup Spanish olive oil
- β1 cup Crispy breadcrumbs
- β1 Egg
- βto taste Salt
- βto taste Black pepper
- β2 cloves Garlicminced
- β1/4 cup Chopped fresh parsley

In a large bowl, combine squid, potatoes, olive oil, egg, salt, black pepper, and garlic. Mix well.

Add breadcrumbs to the bowl and mix until just combined. Be careful not to overmix.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.

When ready to fry, heat about 1-2 inches of olive oil in a large skillet over medium-high heat.

Using a spoon, drop small balls of the squid mixture into the hot oil. Do not overcrowd the skillet.

Fry the croquettes for about 3-4 minutes on each side, or until golden brown and crispy.

Remove the croquettes from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Serve the croquettes hot, garnished with chopped parsley.

Note: If you want to bake the croquettes instead of frying, preheat your oven to 400Β°F (200Β°C) and bake for about 15-20 minutes, or until crispy and golden brown.
