Smoky Blackened Tagine Beans
A rich and flavorful stew originating from Tunisia, made with smoky spices and tender beans. Perfect for a comforting dinner.
Ingredients
- β1 cup dried, soaked overnight Beans (such as kidney or pinto)
- β2 tsp Tunisian Smoked Paprika
- β1 tsp Blackened Spice Blendhomemade or store-bought
- β2 tbsp Olive oil
- β1 medium, chopped Onion
- β3 cloves, minced Garlic
- β1 cup, chopped Dried apricots
- β1 can (15 oz), drained and rinsed Chickpeas
- βto taste Salt
- βto taste Black pepper
Instructions

Heat the olive oil in a large saucepan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for another minute.

Add the soaked and drained beans, Tunisian Smoked Paprika, Blackened Spice Blend, dried apricots, and chickpeas.

Stir well to combine.

Add enough water to cover the ingredients and bring to a boil.

Reduce the heat to low, cover, and simmer for 30-40 minutes, or until the beans are tender.

Season with salt and black pepper to taste.
