Slovakian Roasted Pork Roast
A classic Slovakian dish featuring a deliciously roasted pork roast, perfect for a hearty dinner.
Ingredients

- ●2 teaspoons salt
- ●1 teaspoon black pepper
- ●1 teaspoon caraway seeds
- ●3 cloves garlicminced
- ●1 medium onionchopped
- ●3-4 medium potatoes
- ●2 medium carrots

Preheat oven to 220°C (425°F).

Season the pork roast with salt, black pepper, and caraway seeds.

Heat a large oven-safe pan over medium-high heat.

Sear the pork roast on all sides until browned, about 2-3 minutes per side.

Transfer the pan to the preheated oven and roast for 20 minutes.

Reduce heat to 180°C (350°F) and continue roasting for an additional 1-2 hours, or until the internal temperature reaches 65°C (150°F).

While the pork is roasting, toss the potatoes and carrots with a little bit of oil and season with salt and pepper.

Spread the potatoes and carrots around the pork roast in the pan.

Continue roasting for an additional 30-40 minutes, or until the potatoes and carrots are tender.
