Ethiopian Lentil Skillet
A hearty and flavorful skillet dish made with red lentils, onions, garlic, ginger, and spices, inspired by Ethiopian cuisine.
Ingredients
- β1 cup red lentilsrinsed and drained
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 inches gingergrated
- β1 skilletlarge
- β2 tablespoons olive oil
- β1 teaspoon ground cumin
- β1 teaspoon ground turmeric
- β1 teaspoon salt
- β1/2 teaspoon black pepper

Heat the olive oil in the skillet over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and grated ginger and cook for 1 minute.

Add the rinsed and drained red lentils, ground cumin, ground turmeric, salt, and black pepper.

Stir to combine and cook for 1 minute.

Add 2 cups of water to the skillet and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes, or until the lentils are tender.
