Kenyan Biscuit Clay Pot Bites
A unique twist on traditional biscuits, baked in clay pots for a crispy crust and fluffy interior.
Ingredients
- β2 cups all-purpose flour
- β1/2 cup cold unsalted buttercut into small pieces
- β1/4 cup granulated sugar
- β1/4 teaspoon kosher salt
- β1 teaspoon baking powder
- β1 cup biscuit mix
- β1 large eggsbeaten
- β1/4 cup milkbuttermilk or regular milk

Preheat the clay pots in a 400Β°F oven for 10 minutes.

In a large bowl, combine the flour, sugar, salt, and baking powder.

Add the cold butter and use a pastry blender or your fingertips to work it into the dry ingredients until the mixture resembles coarse crumbs.

Stir in the biscuit mix.

In a separate bowl, whisk together the egg and milk.

Add the wet ingredients to the dry ingredients and stir until a dough forms.

Turn the dough out onto a floured surface and knead a few times until it comes together.

Roll the dough out to about 1/2 inch thickness.

Cut out small squares, about 2 inches per side.

Place a biscuit square in each clay pot.
