Scottish Haggis Stew
A hearty and traditional Scottish stew made with haggis, a savory mixture of sheep's heart, liver, and lungs. Serve with crusty bread or over mashed potatoes.
Ingredients
- β1 lb Haggis
- β1 lb Dense beef stewing steak
- β1 medium Onion, chopped
- β2 Carrots, peeled and chopped
- β2 medium Potatoes, peeled and chopped
- β1 medium Scottish neeps (turnips)
- β2 cups Beef broth
- β1 cup Water
- β2 tbsp Worcestershire sauce

1. Heat oil in a large heavy pot over medium heat.

2. Brown the haggis on all sides, about 5 minutes.

3. Add the beef stewing steak and brown on all sides, about 5 minutes.

4. Add the chopped onion and cook until softened, about 5 minutes.

5. Add the chopped carrots, potatoes, neeps, and beef broth.

7. Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 2 hours.
