Australian Potato Pancakes
A spicy take on traditional potato pancakes, inspired by Australian flavors. Crispy on the outside, fluffy on the inside.
Ingredients
- β2 large potatoespeeled and grated
- β1 box pancakesgluten-free
- β1/4 cup dillchopped
- β1 tsp chili flakesoptional
- β2 tbsp olive oilfor frying
Instructions

In a bowl, mix together grated potatoes, chopped dill, and chili flakes.

In a separate bowl, mix together pancake mix and a splash of water to form a batter.

Heat olive oil in a pan over medium heat.

Using a spoon, drop small amounts of the potato mixture onto the pan.

Using a spatula, flatten the mixture slightly.

Cook for 3-4 minutes, until the bottom is golden brown.

Flip and cook for an additional 2-3 minutes.
