Polish Dill Pickle Soup
A hearty Polish-inspired soup made with pickled cucumbers and a hint of fresh dill. Serve with a side of crusty bread for a comforting meal.
Ingredients
- β1 cup diced Pickled cucumbers
- β1/4 cup chopped Fresh dill
- β1 pound sliced Polish sausage
- β1 medium diced Onion
- β3 cloves minced Garlic
- β4 cups Chicken broth
- β1 cup Heavy cream
- βto taste Salt
- βto taste Black pepper

In a large pot, cook the sliced Polish sausage over medium heat until browned, about 5 minutes.

Add the diced onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for 1 minute.

Add the chicken broth and bring to a boil.

Reduce heat and simmer for 10-15 minutes.

Stir in the pickled cucumbers and chopped fresh dill.

Use an immersion blender to puree the soup until smooth.

Stir in the heavy cream and season with salt and black pepper to taste.
