Smoky Syrian Pilaf

Ingredients
- ●1 cup dramatic basmati ricepreferably day-old rice
- ●1 tsp smoky paprikaadjust to taste
- ●1 tsp syrian sumacoptional, for extra flavor
- ●1 cup peasfresh or frozen, thawed
- ●2 tbsp vegetable oilfor sautéing

Instructions

Heat oil in a large skillet over medium heat.

Add peas and sauté until tender, about 3-4 minutes.

Add rice to the skillet and stir to combine with peas.

Add smoky paprika and syrian sumac (if using), and stir-fry for 1-2 minutes.

Add 2 cups of water to the skillet and bring to a boil.

Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and fluffy.
