Tunisian Eggplant Tagine
A hearty and flavorful tagine made with eggplant, peas, and a blend of Tunisian spices.
Ingredients

- β1 cup peafresh
- β2 tsp tunisianground spice blend
- β2 tbsp olive oilfor frying
- β3 cloves garlicminced
- β1 tsp cuminground
- β1 tsp corianderground
- β1/2 tsp paprikasmoked
Instructions

Heat the olive oil in a large clay or ceramic pot over medium heat.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the sliced eggplant and cook for 3-4 minutes, until softened.

Add the fresh peas, ground cumin, coriander, and smoked paprika. Stir to combine.

Add the Tunisian spice blend and stir to combine.

Pour in 1 cup of water and bring the mixture to a simmer.

Reduce the heat to low and cook, covered, for 20-25 minutes, until the eggplant is tender.
