Roasted Australian Lamb with Earthy Stir Fry
Experience the flavors of the Australian outback with this hearty roasted lamb recipe, paired with an earthy stir fry.
Ingredients
- ●1 (1.5-2 kg) Australian lamb legbone-in
- ●3 cloves Roasted garlicminced
- ●2 sprigs Fresh thymechopped
- ●4 medium Carrotspeeled and chopped
- ●3 medium Potatoespeeled and chopped
- ●1 large Onionpeeled and chopped
- ●200g Earthly mushroomssliced
- ●2 tbsp Grapeseed oil
- ●1 tsp Salt
- ●1 tsp Pepper

Preheat the oven to 220°C (425°F).

Season the lamb leg with salt and pepper.

Heat 1 tbsp of grapeseed oil in a large oven-safe pan over medium-high heat.

Sear the lamb leg for 2-3 minutes on each side, then transfer to the oven.

Roast the lamb for 20 minutes per kilogram, or until it reaches an internal temperature of 65°C (150°F).

While the lamb is cooking, heat the remaining 1 tbsp of grapeseed oil in a large skillet over medium-high heat.

Add the chopped onion and cook for 3-4 minutes, or until softened.

Add the sliced mushrooms and cook for an additional 2-3 minutes.

Add the chopped thyme and cook for 1 minute, stirring constantly.

To serve, slice the roasted lamb and serve with the earthy stir fry.
