Carrot and Caraway Tagine

- β1 1/2 pounds Carrots
- β2 tablespoons Caraway seeds
- β2 tablespoons Olive oil
- β1 medium Onion
- β2 inches Ginger
- β3 cloves Garlic
- β2 tablespoons Tagine spice
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β1/4 cup Fresh parsley

1. Heat the oil in the bottom of a Dutch oven or clay tagine over medium heat.

2. Add the onion and cook, stirring occasionally, until softened, about 10 minutes.

3. Add the ginger and garlic and cook for 1 minute.

4. Add the carrots, caraway seeds, tagine spice, salt, and pepper.

5. Stir to combine and bring to a boil.

6. Reduce the heat to low, cover, and simmer until the carrots are tender, about 30 minutes.
