Croatian-Style Pork Roast with Indian Spices
A fusion of Croatian and Indian flavors, this dish combines the richness of pork roast with the warmth of Indian spices.
Ingredients
- ●1.5-2 kg pork shoulder
- ●2 tsp cumin
- ●1 tsp coriander
- ●1 tsp garam masala
- ●1 tsp brown sugar
- ●2 tbsp apple cider vinegar
- ●2 tbsp olive oil
- ●2 onions
- ●3 cloves garlic

Preheat the oven to 325°F (165°C).

In a small bowl, mix together cumin, coriander, garam masala, and brown sugar.

Rub the spice mixture all over the pork shoulder, making sure to coat it evenly.

Heat olive oil in a large Dutch oven over medium-high heat. Sear the pork shoulder until browned on all sides, about 5 minutes.

Remove the pork from the pot and set it aside.

Add sliced onions to the pot and cook until they're caramelized and dark brown, stirring occasionally.

Add minced garlic to the pot and cook for 1 minute.

Add apple cider vinegar to the pot and stir to scrape up any browned bits from the bottom.

Return the pork shoulder to the pot and make sure it's coated with the onion and garlic mixture.
