Ethiopian Shiro Scramble
A traditional Ethiopian breakfast dish made with shiro, eggs, and spices. This recipe is a twist on the classic shiro fit-fit by adding scrambled eggs and herbs.
Ingredients

- ●2 Eggbeaten
- ●1 tsp Ethiopian Herbesor dried thyme
- ●2 Free-range Eggfor scrambled eggs
- ●1/2 Red Onionthinly sliced
Instructions

Heat a non-stick pan over medium heat.

Add 1 tsp of herbes and 1/2 tsp of salt to the pan and sauté for 1 minute.

Add the sliced red onion to the pan and sauté until softened.

Add the shiro to the pan and stir to combine with the onion and spices.

Push the shiro mixture to one side of the pan.

Crack in the beaten eggs and scramble them until cooked through.

Mix the scrambled eggs with the shiro mixture.

Use a spatula to press the mixture into the pan and cook for 1-2 minutes.

Serve hot, garnished with chopped fresh herbs if desired.
