Vermicelli Jjigae Stir Fry
A fusion dish combining the flavors of Thai and Korean cuisines. This energizing stir-fry is made with vermicelli noodles and the spicy goodness of jjigae.
Ingredients
- β8 oz vermicelli noodlespreferably rice vermicelli
- β1 tsp Ethiopian red pepper flakesspicy, adjust to taste
- β2 tbsp jjigae pasteKorean chili paste, adjust to taste
- β1 block firm tofucubed
- β1 cup snow peassliced
- β2 cloves garlicminced
- β1/4 cup chopped cilantrofor garnish
Instructions

Cook the vermicelli noodles according to the package instructions. Drain and set aside.

In a large pan, heat 1 tablespoon of oil over medium-high heat.

Add the minced garlic and cook for 1 minute.

Add the cubed tofu and cook until golden brown. Remove from the pan and set aside.

Add another tablespoon of oil to the pan, then add the sliced snow peas. Cook until they start to soften.

Add the Ethiopian red pepper flakes, jjigae paste, and cooked tofu back into the pan. Stir-fry for 2 minutes.

Add the cooked vermicelli noodles to the pan and stir-fry until well combined.

Season with salt to taste, then garnish with chopped cilantro.
