Malaysian Curry Potato Casserole
A unique casserole that combines the flavors of Malaysian curry with the comfort of mashed potatoes. Perfect for a cold evening.
Ingredients
- ●3 large potatoes potatoespeeled and diced
- ●1/4 cup of fermented fish paste fermentedoptional, omit for vegetarian version
- ●2 tablespoons of curry powder curry
- ●1/2 cup of heavy cream creamy
Instructions

Preheat the oven to 375°F (190°C).

Boil the potatoes in salted water until tender. Drain and mash.

In a pan, heat some oil and sauté the curry powder for 1 minute.

Add the fermented fish paste (if using) and cook for another minute.

Add the heavy cream and stir until heated through.

Combine the mashed potatoes and curry sauce. Mix well.

Transfer the mixture to a baking dish and top with additional grated cheese (if desired).
