Chestnut and Syrian Tagine Risotto
An Italian-inspired risotto dish featuring the flavors of Syria and the earthiness of chestnuts.
Ingredients
- ●1 cup Chestnut Mushrooms
- ●2 tbsp Syrian Olive Oil
- ●1/2 cup Creme Fraiche
- ●2 tbsp Fermented Lemon Juice
- ●3 cloves Garlic
- ●1/4 cup White Wine
- ●1 cup Arborio Rice
- ●1/4 cup Grated Parmesan Cheese
- ●to taste Salt
Instructions

Heat the Syrian Olive Oil in a large skillet over medium heat.

Add the Garlic and sauté until fragrant, about 1 minute.

Add the Arborio Rice and cook for 1-2 minutes.

Add the White Wine and cook until absorbed, stirring constantly.

Add 1 cup of hot broth and stir until absorbed. Repeat for 15-20 minutes, or until the rice is cooked.

Stir in the Creme Fraiche, Fermented Lemon Juice, and Grated Parmesan Cheese.

Add the Chestnut Mushrooms and cook until heated through.

Season with Salt to taste.
