Argentinian Blackberry Empanadas
Sweet and savory empanadas filled with blackberries and gooey cheese, inspired by Argentinean cuisine.
Ingredients
- β2 cups all-purpose flourfor empanada dough
- β1 cup, crumbled fermented cheesesuch as queso fresco
- β1 cup, fresh blackberriesor frozen
- β1/4 cup unsalted buttermelted
- β1 eggbeaten
- β1/4 tsp empanada filling saltor to taste
- β2 tbsp argentinian chimichurrioptional

Preheat oven to 375Β°F (190Β°C).

In a large bowl, combine flour, salt, and melted butter. Gradually add beaten egg, stirring with a fork until dough forms.

Knead dough for 5 minutes until smooth. Divide into 8 equal pieces.

Roll out each piece into a thin circle, about 3-4 inches in diameter.

Place 1-2 tablespoons blackberries and 1 tablespoon crumbled cheese in the center of each circle.

Fold dough in half, pressing edges to seal. Brush tops with beaten egg.

Bake empanadas on a baking sheet for 15-20 minutes, or until golden brown.
