Northern Thai Avocado Soup
A creamy and spicy soup originating from Northern Thailand. This recipe combines the flavors of fiery Thai chilies with the richness of avocado.

- β2 ripe Avocado
- β1-2 fiery Thai chilies
- β1 medium Onion
- β2 tbsp Northern som tam sauceor substitute with Thai chili sauce
- β1 can Coconut milk
- β2 cups Water
- βto taste Salt

1. In a blender or food processor, combine the avocado, Thai chilies, onion, som tam sauce, and 1 cup of coconut milk.

2. Blend the mixture until smooth.

3. In a large saucepan, combine the blended mixture, remaining coconut milk, and water.
