Argentinian Gratin Potatoes
A classic Argentinian side dish made with thinly sliced potatoes, onions, and cheese baked in the oven.
Ingredients
- β2 lbs (1 kg) New Potatoes
- β1 lb (0.5 kg) Floury Potatoes
- β4 tbsp (60g) Butter
- β1 large Onion
- β3 cloves Garlic
- β1 cup (120g) Parmesan Cheese
- β1 cup (120g) Cheddar Cheese
- βto taste Salt
- βto taste Black Pepper
- βchopped (optional) Fresh Parsley

Preheat the oven to 400Β°F (200Β°C).

Thinly slice the new potatoes and floury potatoes.

In a large pan, melt 2 tbsp of butter over medium heat. Add the sliced onions and cook until softened.

Add the sliced garlic and cook for 1 minute.

Add the sliced potatoes to the pan and toss to combine with the onions and garlic.

Transfer the potato mixture to a 9x13 inch baking dish.

In a separate pan, melt the remaining 2 tbsp of butter over medium heat. Add the parmesan and cheddar cheese and stir until melted and smooth.

Pour the cheese sauce over the potato mixture in the baking dish.

Season with salt and black pepper to taste.

Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and the top is golden brown.

Garnish with chopped fresh parsley, if desired.
