French Stew with Fragrant Mushrooms

- β2 medium French OnionThinly sliced
- β1 pound beef or venison Stew MeatCut into 1-inch cubes
- β3 cloves minced Garlic
- β2 sprigs fresh Thyme
- β1 cup Red WineDry, full-bodied (e.g., Cabernet Sauvignon)
- β2 cups Beef BrothHomemade or store-bought
- β2 tablespoons Flour

Season the stew meat with salt and pepper.

In a large Dutch oven, heat 2 tablespoons of oil over medium-high heat. Sear the stew meat until browned, then remove and set aside.

Reduce heat to medium and add more oil if necessary. Add the sliced onions and cook until caramelized, stirring occasionally.
