Stir Fry with Pineapple and Eastern Nuts
A quick and easy Asian-inspired stir fry dish with a sweet and tangy twist from the pineapple.
Ingredients
- β1 cup Eastern (wal) nuts
- β2 cups Blanched middle eastern vegetables (such as carrots, bell peppers, and broccoli)
- β1 cup Fresh pineapple
- β2 tablespoons Olive oil
- β2 tablespoons Soy sauce
- β1 tablespoon Ginger
- β1 clove Garlic
- βto taste Salt
- βto taste Black pepper
- β1 teaspoon Sesame oil

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the Eastern nuts and cook until lightly toasted, about 2-3 minutes.

Add the blanched middle eastern vegetables and cook until tender, about 4-5 minutes.

Add the pineapple and cook for an additional 2 minutes.

In a small bowl, whisk together the soy sauce, ginger, garlic, salt, and black pepper.

Pour the sauce over the vegetables and nuts, and stir to combine.

Cook for an additional 1-2 minutes, until the sauce has thickened.

Stir in the sesame oil and serve hot.
