Garlicky Samphire Gratin
A rich and flavorful side dish that showcases the delicate taste of samphire. Perfect for accompanying a hearty Irish dinner.
Ingredients
- β225g SamphireFresh or frozen
- β3 cloves GarlicMinced
- β100g Gratin cheeseIrish cheddar or similar
- β25g ButterUnsalted
- β100ml MilkWhole milk or heavy cream
- βa pinch SaltTo taste
- βa few grinds Black pepperTo taste

Preheat oven to 180Β°C.

Trim the samphire to 5cm lengths and blanch in boiling water for 3-5 minutes, or until tender.

Drain the samphire and set aside.

In a saucepan, melt the butter over medium heat.

Add the minced garlic and cook for 1 minute, until fragrant.

Stir in the grated cheese until melted and smooth.

Add the milk, salt, and pepper, and stir to combine.

In a greased baking dish, arrange a layer of samphire.

Pour some of the cheese sauce over the samphire.

Repeat the layers until all the ingredients are used up, finishing with a layer of cheese on top.

Bake for 20-25 minutes, or until the top is golden brown and the sauce is bubbly.
