Jamaican Chicken Fried Rice
A flavorful twist on the classic Chinese dish, featuring Jamaican spices and halal chicken.
Ingredients
- β1 1/2 pounds halal chicken breastcut into bite-sized pieces
- β4 cups breadpreferably day-old
- β1 cup bowlfor serving
- β2 tablespoons vegetable oilfor frying
- β1 medium oniondiced
- β2 cloves garlicminced
- β1 teaspoon Jamaican jerk seasoningor to taste
- β2 tablespoons soy saucepreferably low-sodium
- β1/4 cup scallionschopped, for garnish

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the diced onion and minced garlic; cook until the onion is translucent, about 3-4 minutes.

Add the halal chicken breast; cook until browned and cooked through, about 5-6 minutes.

Add the bread; cook, breaking it up with a spatula, until it is well combined with the chicken and onions, about 2-3 minutes.

Stir in the Jamaican jerk seasoning and soy sauce; cook for an additional 1-2 minutes.
