Italian Charred Potato Gratin
A hearty Italian-inspired side dish featuring charred potatoes, onions, and rosemary, topped with a crispy golden gratin.
Ingredients
- β2 pounds Yukon Gold Potatoespeeled and thinly sliced
- β1 large Onionpeeled and thinly sliced
- β2 sprigs Fresh Rosemarychopped
- β3 cloves Garlicminced
- β1/2 cup Grana Padano Cheeseshredded
- β1/4 cup Extra Virgin Olive Oilfor brushing

Preheat the oven to 400Β°F (200Β°C).

In a large bowl, toss the sliced potatoes with 2 tablespoons of olive oil, salt, and pepper until they are evenly coated.

Spread half of the potatoes in a single layer on a baking sheet.

Roast in the preheated oven for 20 minutes.

While the potatoes are roasting, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat.

Add the sliced onion and cook, stirring occasionally, until it is caramelized and golden brown, about 20-25 minutes.

Add the minced garlic and cook for 1-2 minutes, stirring constantly, until fragrant.

Stir in the chopped rosemary and cook for 1 minute.

Remove the potatoes from the oven and top with the caramelized onion mixture, followed by the shredded Grana Padano cheese.
