Grilled Syrian Pasta
A hearty, flavorful pasta dish inspired by Syrian cuisine, featuring grilled vegetables and a zesty sauce.
Ingredients
- β8 oz Penne pastawhole wheat or regular
- β1 medium Grilled eggplantgrilled over medium heat
- β1 medium Grilled zucchinigrilled over medium heat
- β1 medium Red bell peppergrilled over medium heat
- β1 cup Cherry tomatoeshalved
- β2 tbsp Olive oilfor grilling and sauce
- β2 tbsp Lemon juicefreshly squeezed
- β1 clove Garlicminced
- βto taste Salt
- βto taste Black pepper
Instructions

Preheat grill to medium-high heat.

Grill eggplant, zucchini, and red bell pepper for 3-4 minutes per side, or until tender and lightly charred.

Slice the grilled vegetables into bite-sized pieces.

Cook penne pasta according to package instructions until al dente.

In a large skillet, heat olive oil over medium heat.
