French Sausage Tagine
A hearty French-inspired dish made with sausages and a flavorful tagine sauce. Perfect for a cold winter's night.
Ingredients
- β1 pound, sliced SausagesUse French sausages such as Toulouse or Kielbasa
- β1 large, chopped OnionYellow onion works best
- β3 cloves, minced GarlicMince for best flavor
- β2 tablespoons Tomato pasteUse high-quality paste for best flavor
- β1 can, 14.5 oz Canned diced tomatoesLook for low-sodium option
- β1 cup Chicken brothUse low-sodium broth for best flavor
- β2 tablespoons Olive oilUse good-quality oil for best flavor
- β1/4 cup Chopped fresh parsleyAdd just before serving for best flavor
Instructions

Heat oil in the bottom of a large Dutch oven or heavy pot over medium-high heat.

Add sliced sausages and cook until browned, about 5 minutes.

Remove sausages from pot and set aside.

Add chopped onion to pot and cook until softened, about 5 minutes.

Add minced garlic and cook for 1 minute.

Add tomato paste and cook for 1 minute, stirring constantly.

Add diced tomatoes, chicken broth, and browned sausages.

Stir to combine and bring to a simmer.

Reduce heat to low and cook, covered, for 20-25 minutes or until sausages are cooked through.
