Royal Couscous with Cauliflower and Spices
A flavorful and healthy couscous dish, perfect for a weeknight dinner, that combines the warmth of Moroccan spices with the earthiness of cauliflower.
Ingredients
- β1 1/2 cups Couscouspreferably whole wheat
- β1 head, broken into florets Cauliflowerabout 4 cups
- β1 tsp Royal Spicesavailable at most spice shops or online
- β1 tsp Moroccan Spicesavailable at most spice shops or online
- β2 tbsp Hearty Olive Oiluse a high-quality olive oil
- β1 tsp Peppery Saltuse a coarsely ground salt
- β1/4 cup Chopped Fresh Parsleyoptional, for garnish

Heat the olive oil in a large saucepan over medium heat.

Add the Moroccan spices and royal spices and stir for 1 minute.

Add the cauliflower and cook, stirring occasionally, until it is tender but still crisp, about 5 minutes.

Stir in the couscous and cook for 1-2 minutes.

Add 2 cups of water to the saucepan and bring to a boil.

Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 5 minutes.
