Irish Lamb Stew
A hearty and comforting stew made with tender lamb, smoky bacon, and root vegetables. This traditional Irish dish is perfect for a chilly evening.
Ingredients
- β1 1/2 pounds Lamb shoulder
- β6 slices Smoked bacon
- β1 large Onion
- β4 medium Carrots
- β2 large Potatoes
- β1 cup Pearl barley
- β1 cup Red wine
- β2 cups Chicken broth
- β2 sprigs Thyme
- β Salt and pepper

1. Cut the lamb into 1 1/2-inch cubes and season with salt and pepper.

2. In a large pot or Dutch oven, cook the smoked bacon over medium heat until crispy. Remove the bacon and set aside.

3. Add the lamb to the pot and cook until browned on all sides, about 5 minutes. Remove the lamb and set aside with the bacon.

4. Add the onion to the pot and cook until softened, about 5 minutes.

5. Add the carrots and potatoes to the pot and cook for 5 minutes.

6. Add the pearl barley, red wine, chicken broth, and thyme to the pot. Stir to combine.

7. Return the lamb and bacon to the pot. Cover and bring to a boil.

8. Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the lamb is tender.
