Irish Stew with Potatoes
A hearty and comforting traditional Irish stew made with tender chunks of lamb, potatoes, and carrots.
Ingredients
- β1 pound Lamb shouldercut into 1-inch cubes
- β2 medium Potatoespeeled and cubed
- β2 medium Carrotspeeled and sliced
- β1 medium Onionchopped
- β2 cloves Garlicminced
- β2 tablespoons All-purpose flourfor dusting lamb
- β2 cups Beef brothhomemade or store-bought
- β1 cup Wateras needed
- β1 sprig Thymefresh or dried

1. In a large pot or Dutch oven, heat 2 tablespoons of oil over medium heat.

2. Dust the lamb cubes with flour, shaking off excess.

3. Add the lamb to the pot and cook until browned on all sides, about 5 minutes.

4. Remove the lamb from the pot and set aside.

5. Add the chopped onion to the pot and cook until softened, about 5 minutes.

6. Add the minced garlic and cook for 1 minute.

7. Add the sliced carrots and cook for 5 minutes.

8. Add the beef broth, water, and thyme to the pot.

9. Return the lamb to the pot and bring to a boil.

10. Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the lamb is tender.

11. Add the cubed potatoes to the pot and continue to simmer for another 30 minutes, or until they are tender.
