Midnight Thai Vegetable Tagine

- β2 cups vegetables mix (carrots, zucchini, bell peppers)
- β2 tbsp midnight oil (or olive oil)
- β1 medium onion
- β3 cloves garlic
- β2 tbsp thai red curry paste
- β1 can (14 oz) coconut milk
- β2 cups vegetable broth
- β1 tsp cumin
- β1 tsp coriander
- β1 tsp salt
- β1 tsp intense spices (cayenne pepper, black pepper, turmeric)

Heat oil in a large pan over medium heat.

Add onion and garlic, cook until softened (5 minutes).
