Moroccan Tagine with Sweet Dates
A rich and flavorful Moroccan stew made with sweet dates, tender chicken, and aromatic spices.
Ingredients
- β1 1/2 pounds chicken thighs bone-in, skin-on
- β1/4 cup date syrupor to taste
- β2 tablespoons olive oilfor cooking
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 teaspoon ground gingerground
- β1 teaspoon ground cuminground
- β1/2 teaspoon ground cinnamonground
- β1/2 teaspoon saltto taste
- β1/4 teaspoon black pepperto taste
- β1 cup chicken brothlow-sodium
- β2 medium sweet potatoespeeled and cubed

Heat the olive oil in the bottom of a large, heavy pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the ground ginger, cumin, and cinnamon, and cook for 1 minute.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Add the date syrup, chicken broth, salt, and black pepper.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.

Add the cubed sweet potatoes and continue to simmer, covered, for 20-25 minutes, or until the sweet potatoes are tender.
