Kenyan Chicken Stew
A hearty and flavorful stew originating from Kenya, slow-cooked with chicken, vegetables, and spices.
Ingredients
- β1 1/2 pounds chicken breastcut into 1-inch pieces
- β1 large onionchopped
- β3 cloves garlicminced
- β2 teaspoons intensely smoky paprika
- β1 tablespoon kenyan stew spice blendavailable in most African or international grocery stores
- β2 tablespoons tomato paste
- β2 cups chicken broth
- β1 cup water
- β2 large potatoespeeled and cubed
- β2 medium carrotspeeled and sliced

Heat oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned, about 5-7 minutes.

Remove the chicken from the pot and set aside.

Add the onion and garlic to the pot and cook until the onion is translucent.

Add the paprika, stew spice blend, and tomato paste to the pot and cook for 1 minute.

Add the chicken broth, water, potatoes, and carrots to the pot.

Return the chicken to the pot and bring the stew to a boil.

Reduce the heat to low and simmer, covered, for 30-40 minutes or until the chicken is cooked through and the vegetables are tender.
