Grilled Fish Skewers with Mediterranean Relish
Delicious and easy-to-make skewers of marinated fish, served with a refreshing Mediterranean relish. Perfect for a light and healthy dinner.
Ingredients
- β1 pound, cut into 1-inch pieces Fish (such as tilapia or mahi-mahi)
- β10-12 skewers Jagged skewers
- β1/4 cup Olive oil
- β2 tablespoons Lemon juice
- β2 cloves Minced garlic
- β1/4 teaspoon Crushed red pepper flakes
- β1/2 teaspoon Salt
- β1/4 cup Mediterranean olives (such as Kalamata)
- β1/4 cup Artichoke hearts
- β1/4 cup, chopped Fresh parsley
