Savory Khichdi Fried Rice
A Chinese-inspired twist on the traditional Indian khichdi dish, featuring crispy fried rice and savory flavors.
Ingredients

- β1 cup khichdihomemade or store-bought
- β1 tablespoon jammyAsian-style jammy sauce
- β1 cup tendersliced or chopped vegetables (e.g., carrots, peas)
- β1 teaspoon indiancurry powder or Indian spice blend

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.

Add the sliced or chopped tender vegetables and cook until they start to soften, about 2-3 minutes.

Push the vegetables to one side of the skillet. Crack an egg into the other side of the skillet and scramble it until cooked through.
