Italian-Style Khichdi Risotto
A unique fusion of Italian and Indian flavors, this khichdi risotto is a creative twist on traditional Italian cuisine.
Ingredients

- ●1 cup khichdi
- ●2 cups, mixed vegetables tender
- ●2 tablespoons, fig jam jammy
- ●2 teaspoons, garam masala indian
- ●2 tablespoons olive oilfor sautéing
- ●1 medium, chopped onionfor sautéing
- ●2 cloves, minced garlicfor sautéing
- ●1 cup white winefor deglazing
Instructions

Heat olive oil in a large skillet over medium-high heat.

Add the chopped onion and cook until translucent, about 3-4 minutes.

Add the minced garlic and cook for an additional minute.

Add the mixed vegetables and cook until tender, about 5-6 minutes.

Add the garam masala and cook for 1 minute.

Add the white wine and deglaze the skillet, scraping up any browned bits.

Add the rice and khichdi to the skillet and stir to combine.

Add 2 cups of water to the skillet and bring to a simmer.

Reduce heat to low and cook, covered, for 20-25 minutes or until the liquid has been absorbed.
