Irish Stew Delight
A hearty and comforting Irish stew made with tender potatoes and flavorful meat. Perfect for a chilly evening.
Ingredients
- β1 pound Irish Stew Meat (beef)
- β3 large Jubilant Potatoes
- β1 medium Onion
- β2 medium Carrot
- β2 stalks Celery
- β2 tablespoons All-purpose Flour
- β1 sprig Fresh Thyme
- β1 teaspoon Salt
- β0.5 teaspoon Black Pepper

Heat a large Dutch oven over medium-high heat.

Add the Irish Stew Meat and cook until browned, approximately 5 minutes.

Remove the browned meat from the pot and set aside.

Reduce heat to medium and add the onion, carrot, and celery. Cook until the vegetables are tender, approximately 8 minutes.

Add the flour and cook for 1-2 minutes, stirring constantly.

Gradually add 2 cups of water, whisking continuously to avoid lumps.

Return the browned meat to the pot and bring to a boil.

Reduce heat to low, cover, and simmer for 1.5 hours, or until the meat is tender.

Add the potatoes and continue to simmer for an additional 30 minutes, or until the potatoes are tender.
