Mujadara (Middle Eastern Lentil and Rice Bowl)
A classic Middle Eastern dish made with lentils, rice, and onions, typically served with a side of salad or yogurt. This recipe is a simple and nutritious option for a weeknight dinner.
Ingredients

- β1 cup middle eastern ricepreferably short-grain rice
- β1 onion, mediumchopped
- β2 tablespoons olive oil
- βto taste salt
- βto taste black pepper
- β1 teaspoon cumin
- β1 teaspoon coriander
Instructions

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.
