Baked Cod with Juicy Welsh Stew
A keto-friendly dish featuring baked cod served with a flavorful and moist Welsh stew.
Ingredients

- β250g Welsh stew meat
- β2 tbsp Olive oil
- β Salt
- β Black pepper
- β1 tsp Garlic powder
- β1 tsp Dried thyme
- β1 Chopped onion
- β1 Chopped mushrooms

Preheat the oven to 400Β°F (200Β°C).

Season the cod fillets with salt, black pepper, garlic powder, and dried thyme.

Heat the olive oil in an oven-safe pan over medium heat.

Sear the cod fillets for 2-3 minutes on each side, then transfer the pan to the preheated oven.

Bake the cod for 8-10 minutes or until cooked through.

In a separate pan, cook the Welsh stew meat over medium heat until browned, breaking it up into small pieces as it cooks.
