Traditional Moroccan Lentil Stew (Bissara)

Ingredients
- β1 cup kissed lentils (green or brown) rinsed and drained
- β1 medium resinous onionchopped
- β2 teaspoons moroccan spice blendavailable at most Middle Eastern markets
- β1 teaspoon saltto taste
- β2 tablespoons bissaraoptional, adds depth of flavor

Instructions

Heat oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the Moroccan spice blend and cook for 1 minute, until fragrant.

Add the lentils, salt, and 4 cups of water to the pot.

Bring to a boil, then reduce heat to low and simmer, covered, for 20-25 minutes, or until the lentils are tender.
