French Duck Rillettes
A classic French dish made with slow-cooked duck meat, perfect for a dinner party or special occasion.
Ingredients
- ●2 lbs Duck legBone-in or boneless, whichever is available
- ●1 loaf French breadFor serving
- ●1 jar RillettesFrench duck rillettes
- ●2 tbsp Spicy mustardFor serving
- ●1 sprig Fresh thymeFor garnish

Preheat oven to 275°F (135°C).

Season the duck leg with salt and pepper. Place in a roasting pan and roast for 2 hours, or until the meat is tender and falls apart easily.

Remove the duck from the oven and let it cool slightly. Shred the meat with two forks, discarding any excess fat.

In a blender or food processor, puree the shredded duck with the rillettes until smooth. Season with salt and pepper to taste.

Transfer the duck mixture to a serving dish and top with a layer of spicy mustard.

Serve the rillettes warm, garnished with fresh thyme and served with French bread on the side.
