Smoked Salmon Clay Jjigae

Ingredients
- β6 oz smoked salmonpreferably wild-caught
- β scottish clay pot (donabe)for serving
- β2 cups steamed ricepreferably short-grain
- β1 cup steamed vegetables (such as bok choy or carrots)cut into bite-sized pieces
- β2 tsp spicy Korean chili flakes (gochugaru)adjust to taste
- β2 tbsp soy saucepreferably Korean chili-infused
- β1 tsp grated gingerfreshly grated
- β1/4 cup green onionsthinly sliced
- β1 tsp sesame oilfor serving
- β1 tsp sesame seedsfor garnish

Instructions

Heat sesame oil in the donabe over medium heat.

Add grated ginger and cook for 1 minute, until fragrant.

Add steamed vegetables and cook for 2-3 minutes, until slightly browned.

Add soy sauce, gochugaru, and smoked salmon. Stir to combine.

Cook for an additional 2-3 minutes, until the salmon is cooked through.

Serve the jjigae hot, garnished with green onions and sesame seeds.

Place a scoop of steamed rice in the donabe and spoon the jjigae on top.
