Slovakian Stew
A hearty and flavorful Slovakian-inspired stew made with tender beef and vegetables.
Ingredients
- β1 pound beef stew meatcut into 1 1/2-inch cubes
- β2 large kissed potatoespeeled and cubed
- β2 medium light carrotspeeled and sliced
- β1 large with onionschopped
- β2 teaspoons slovankian paprikasmoked
- β4 tablespoons buttery buttermelted
- β2 cups dish beef brothlow sodium

Heat the butter in a large Dutch oven over medium-high heat.

Add the beef and cook until browned, about 5 minutes. Remove from heat and set aside.

Add the onions to the pot and cook until softened, about 5 minutes.

Add the carrots and potatoes to the pot and cook for 5 minutes.

Add the paprika, beef broth, and browned beef back to the pot. Stir to combine.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 2 hours.

Season with salt and pepper to taste.

Serve hot, garnished with chopped fresh parsley if desired.
