French Lamb Stew
A hearty and flavorful French-inspired lamb stew recipe, perfect for a cold evening. This dish combines the rich flavors of lamb with the comfort of a classic French stew.
Ingredients
- β1 pound Lamb shoulder
- β2 tablespoons Olive oil
- β1 large Onion
- β2 medium Carrot
- β2 stalks Celery
- β1 cup Red wine
- β2 cups Beef broth
- β2 tablespoons Tomato paste
- β2 sprigs Thyme
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Heat the olive oil in a large Dutch oven over medium-high heat.

Sear the lamb shoulder until browned on all sides, about 5 minutes.

Remove the lamb from the pot and set aside.

Add the onion, carrot, and celery to the pot and cook until the vegetables are softened, about 5 minutes.

Add the red wine to the pot and bring to a boil, scraping up any browned bits from the bottom of the pot.

Add the beef broth, tomato paste, thyme, salt, and pepper to the pot.

Return the lamb to the pot and bring to a boil.
