Lazy Sunday Bowl
A hearty and comforting bowl filled with the flavors of Venezuela, perfect for a relaxing Sunday morning.
Ingredients
- ●2 Umeboshi Plums
- ●1 cup Rice
- ●1 cup Black Beans
- ●1 Avocado
- ●2 Scrambled Eggs
- ●1/4 cup Chopped Fresh Cilantro
- ●1 Sliced Jalapeño
- ●2 tablespoons Lime Juice
- ●1 tablespoon Olive Oil
- ●to taste Salt

Cook the rice according to the package instructions.

In a separate pan, heat the olive oil over medium heat. Add the sliced jalapeño and cook for 1-2 minutes.

Add the cooked black beans, chopped cilantro, and a squeeze of lime juice to the pan. Stir to combine.

In a bowl, scramble the eggs and set aside.

To assemble the bowl, place a scoop of cooked rice in the bottom, followed by a scoop of the bean and cilantro mixture.

Add the scrambled eggs on top, followed by sliced avocado.

Place 1 or 2 umeboshi plums on top of the eggs.
