French-Style Chorizo Tagine
A fusion of French and Moroccan flavors, this hearty tagine features spicy chorizo sausage and tender vegetables.
Ingredients
- β1 pound, sliced Chorizo sausage
- β1 Light tagine
- β4 (optional) Norwegian salmon fillets
- β2, chopped Onions
- β3 cloves, minced Garlic
- β2 cups, diced Tomatoes
- β1 can, drained Chickpeas
- β1/4 cup, chopped Parsley
- β2 teaspoons Cumin
- β1 teaspoon Paprika
- βto taste Salt
- βto taste Black pepper

Heat oil in the tagine over medium-high heat.

Add the sliced chorizo and cook until browned, about 5 minutes.

Add the chopped onions and minced garlic, cooking until softened, about 5 minutes.

Add the diced tomatoes, chickpeas, cumin, paprika, salt, and pepper.

Stir to combine and bring to a simmer.

Reduce heat to low, cover, and cook for 20 minutes.

Optional: add the Norwegian salmon fillets to the tagine for the last 10 minutes of cooking.
