Norwegian-Style Chorizo Tagine
A hearty and flavorful stew inspired by Norwegian and North African cuisine. This chorizo tagine is gluten-free, making it a great option for those with dietary restrictions.
Ingredients

- β2 tablespoons light
- β1 whole tagine
- β1 medium, chopped onion
- β3 cloves, minced garlic
- β2 medium, peeled and chopped carrots
- β2 medium, peeled and chopped potatoes
- β1 teaspoon cumin
- β1 teaspoon coriander
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper

Heat the light in a large Dutch oven over medium-high heat.

Add the sliced chorizo and cook until browned, about 5 minutes. Remove from the pot and set aside.
