Filipino-Style Kare Kare with Kale
A hearty and flavorful Filipino stew made with a rich peanut sauce, tender ox tripe, and nutritious kale. Serve with steamed rice for a satisfying meal.
Ingredients

- ●1 cup peanutsroasted and ground

Heat oil in a large pot over medium heat. Sear the ox tripe until browned, then set aside.

In the same pot, sauté the onion and garlic until softened.

Add the peanuts, annatto seeds, salt, and black pepper. Cook for 1 minute.

Add 2 cups of water and bring to a boil.

Return the ox tripe to the pot and simmer for 1 hour, or until tender.

Add the chopped kale to the pot and cook until wilted.

Serve hot with steamed rice and garnish with fresh herbs, if desired.

Note: Traditionally, kare kare is made with a variety of ingredients, including ox tripe, vegetables, and bagoong (fermented shrimp paste). This recipe is a simplified version using kale and omitting bagoong for a vegetarian option.
