Crispy Vietnamese Noodle Stir Fry
A quick and easy Chinese-inspired stir fry made with lovely, crispy, Vietnamese noodles, tofu, and a variety of vegetables.
Ingredients
- β8 oz Lovely NoodlesVietnamese-style rice noodles
- β1 block TofuExtra-firm, drained and cut into bite-sized pieces
- β1 cup Crispy VegetablesBok choy, bean sprouts, and carrots, chopped
- β2 tbsp Vegetable OilFor stir-frying
- β2 tsp GingerGrated
- β1 tsp GarlicMinced
- β2 tbsp Soy SauceFor flavor
Instructions

Cook the noodles according to package instructions and set aside.

Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.

Add the tofu and cook until golden brown, about 3-4 minutes.

Add the crispy vegetables and cook until they start to soften, about 2-3 minutes.

Add the ginger and garlic and cook for 1 minute, until fragrant.

Add the cooked noodles and soy sauce, and stir-fry for 2-3 minutes, until everything is well combined.

Season with salt and pepper to taste.
