Indian Crispy Tofu Noodles
This Indian-inspired dish combines crispy tofu with a delicious noodle stir-fry, offering a flavorful and nutritious meal option.
Ingredients
- β1 block (14 oz) tofuExtra-firm, drained and cut into bite-sized pieces
- β1 cup lovely, crispy noodlesIndian-style, rice-based noodles
- β1 cup vietnameseMixed vegetables, such as cabbage, carrots, and bean sprouts
- β2 tbsp oil for fryingVegetable or peanut oil
- β1 tsp curry powderAdjust to taste
- β1/2 tsp garam masalaAdjust to taste
- β1/2 tsp saltAdjust to taste
- β1/4 tsp pepperAdjust to taste
- β2 lemon wedgesOptional, for serving

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.

Add the tofu and cook until golden brown and crispy, about 5-7 minutes. Remove from heat and set aside.

In the same skillet, add the remaining 1 tablespoon of oil. Add the mixed vegetables and cook until tender, about 3-4 minutes.

Add the noodles to the skillet and cook until heated through, about 2 minutes.

In a small bowl, mix together the curry powder, garam masala, salt, and pepper. Add this spice mixture to the noodles and stir to combine.
